Heat some vegetable oil in a frying pan or large pot and add the garlic, ginger, and onion. Sautée for a couple of minutes and add the spice mix

Add chopped tomatoes, red pepper, and tomato paste. Keep stirring for a few minutes.

Peel the plantains and slice them into small pieces.

Deglaze the pan with a little bit of water and add the cooked black beans and the plantain

Add the vegetable stock, and bay leaf, and bring the pan to a simmer

Leave simmering to medium heat until the plantain becomes fork-tender (about 35 minutes)

Garnish with some finely chopped coriander and serve.
