Our Thai Red Curry with Tofu is made with coconut milk, a variety of fresh vegetables and tofu.

You can use homemade paste, or store-bought red curry paste

Heat some coconut oil in a pan and add the curry paste

SIXHUNGRYFEET.COM

 Add 2 tablespoons of coconut milk and cook until the oil separates

Add the rest of the coconut milk, stock, soy sauce, brown sugar, and lime leaves.

 Add chopped fresh veggies of your choice, bring to a simmer and cook until tender.

Pan-fry the tofu and add to the curry before serving.
