One-pot Arabic Lentil Soup

Middle Eastern red lentil soup served with fresh parsley or coriander and a generous drizzle of lemon is all you need to warm up your body and soul.

For this recipe you will need red lentils, fresh chopped veggies, vegetable broth, spices, lemon, and garlic.

1. Heat some olive oil in a large pot. Add the onion, then add finely chopped garlic, carrot, celery, and tomato. Cook for 7-8 minutes while you keep stirring regularly

2. Add spice mix and lentils. Stir well and cook for 1-2 minutes.

3. Add the vegetable stock, bring to a simmer and cook for 20 minutes or until the lentils and completely cooked.

4. Using an immersion blender or hand blender, half blend the soup or blend until you have the desired consistency

Drizzle some lemon, add chopped coriander or parsley and serve.
