For this recipe you will need cauliflower, presoaked cashews, vegan butter, flour, vegan cheese, spices, lemon juice and water.

Add the cauliflower cut into florets into boiling water. Cook for about 8 minutes or until they are tender.

Make vegan béchamel by following our recipe for Vegan White Sauce or Bechamel or the instructions in the recipe

Once the bechamel is ready, add mustard, lemon juice, a handful of vegan cheese, spices, salt, and pepper

Place the cauliflower in a casserole dish and add the bechamel sauce on top.

Combine until all the cauliflower florets are well coated with sauce

Add some more plant-based cheese on top and optionally, a few vegan butter crumbles

Bake for about 20 minutes at 200C (400F). Add some fresh herbs such as sage, oregano, rosemary, or basil.
