This Korean meal consists of Sweet potato noodles served with stir-fried vegetables, crunchy tofu, and a delicious and rich sauce.

For this recipe you will need sweet potato noodles, veggies, japchae sauce (homemade), tofu, sesame oil and sesame seeds.

Prepare the vegetables by thinly slicing them. Cook the spinach in boiling water for about 2 minutes or until wilted. Drain and reserve for later

Cook the tofu. For this recipe, we air-fry the tofu cut into thin strips for about 12 minutes at 200C (400F)

Prepare the Japchae sauce. Combine tamari, sesame oil, and maple syrup

Cook the sweet potato starch noodles. Bring a large pot of water to a boil. Add the noodles and cook following the packet instructions.

Cook the vegetables. Korean Japchae is a simple dish but it requires some time as the vegetables need to be cooked separately
