What you'll need: eggplants, tomatoes, chickpeas, garlic, tomato paste, fresh mint, dried mint, and cinnamon.

Partially peel and cut the eggplant.

Drizzle some olive oil, and bake until fork-tender at 200C (400F)

Heat olive oil in a pan over medium heat. Add the onion nd cook for a few minutes until the color starts to change.

Then add the garlic, and cook for 1-2 more minutes.
