Red Velvet Waffles (Dairy-free)

Our Red Velvet Waffles are the perfect breakfast or brunch for special days such as Valentine's Day, Christmas, Mother's day, or any other day that you feel like celebrating. Our recipe is dairy-free and doesn't use artificial colouring. Beetroot is our secret ingredient!

Ingredients

  • 2 ⅓ cup flour
  • 2 teaspoon baking powder
  • 1 tablespoon cocoa powder
  • 4 tablespoon panela sugar
  • seeds from a vanilla bean or 1 teaspoon vanilla extract
  • 2 cups soy milk
  • 2 eggs
  • ½ cup fresh beetroot puree
  • 1 tablespoon olive oil or melted vegan butter

Instructions

  • Turn the waffle maker on so you give it some time to heat up.
  • Mix all the dry ingredients in a big mixing bowl: Flour, baking powder, cacao, sugar, and vanilla seeds if using vanilla bean. Whisk until they are all incorporated
  • Add into the mixing bowl the wet ingredients, apart from the egg whites: Milk, egg yolks, beetroot puree, and oil. Whisk until all the ingredients are perfectly incorporated.
  • Whisk using an electric hand whisker the egg whites until you have a cloudy consistency. You should be able to form soft peaks. Once it's done, pour the mixture into the batter and gently mix with the rest of the ingredients without overmixing it.
  • Grease the waffle maker with olive oil or margarine. Add enough batter in the waffle maker and leave it covered while cooking. Do not open the lid if the waffle maker is steaming. When the steam starts reducing it's an indicator that your waffle should be done. Depending on the setting you have it will take more or less time. We normally have it set at 70% between light and dark. It takes around 5-7 minutes for each waffle to be completely cooked.
  • Take the waffle out of your waffle maker, leave it to cool for 2-3 minutes, add your toppings and enjoy!

Notes

For Valentine's day, we love adding strawberries, vanilla ice cream and chocolate syrup on top of our Waffles.
