Chili Sin Carne
A Hearty bowl of chili sin carne, packed full of flavour and fresh ingredients.
Servings: 4 people
- 1 onion chopped
- 4 garlic cloves crushed
- 2 bell peppers (any type) chopped
- 1/2 teaspoon cayenne or chili flakes
- 2 teaspoon cumin powder
- 1 tablespoon smoke paprika
- 400 gr cannelloni beans
- 2 400 gr chopped tin tomatoes
- Salt to taste
Heat 1 tablespoon of olive oil in a large saucepan. When hot, add the onion and cook for 3-4 minutes on medium heat, then add the garlic and cook for a further 30 seconds.
Add in the chopped peppers, cayenne or chili flakes, cumin and smoked paprika. Cook for one more minute, add the tins of tomatoes and mix well.
Add the beans and simmer for 15-20 minutes until the sauce has thickened. Adjust with salt and pepper to taste.
Serve with tortilla chips, avocado, coconut yoghurt or over rice.
