Our Tom Kha Soup or Thai Coconut Soup recipe is the vegan version of the common Tom Kha Gai.

Get your ingredients ready to make vegan Tom Kha from scratch

1. Make the curry paste for the Tom Kha. Stir fry carrot, onion, garlic and red chilis.

2. Blend all the ingredients with soy sauce.

3. Briefly stirfry the paste with the galangal and lemongrass

SIXHUNGRYFEET.COM

4. Pour the vegetable stock and add kaffir lime leaves, mushroom, tofu and sugar. Bring to a simmer and leave simmering for 10-15 minutes.

5. Add the coconut milk and soy sauce. Stir for 2 minutes making sure it doesn't get to a boiling point.

6. Serve with chopped cilantro and a splash of freshly squeezed lime.
