Mango Coconut Popsicles

Delicious healthy, vegan and gluten-free summer dessert.

Ingredients

  • 200 g fresh mango
  • 100 g fresh pineapple
  • 400 ml coconut milk extra creamy
  • Juice of half a lime
  • 5-6 dates

Instructions

Coconut Cream Mixture

  • Add the coconut milk and dates into a blender and blend until all the dates are fully blended. Pour the mixture inside each mold just filling half of the mold.

Fruit Mixture

  • Cut the mango and pineapples in cubes and add them into the blender. Add the lime juice and blend until smooth consistency. Pour the mixture inside each mold filling it to the top.
  • Swirl the mixture gently with the help of a wooden stick. Cover with lid (if any) and place the wooden sticks.
  • Freeze for at least 5 hours or until totally frozen.

Notes

  • To get the popsicles out of the mold easily, sink the mold in warm water for 20-30 seconds. That should help!
