Apple Upside-Down Cake (Vegan and Gluten-Free)

Ingredients

Glaze

  • ¼ cup vegan butter
  • ½ cup brown sugar
  • 1 cooking apple

Cake

  • 220 g self raising gluten-free flour
  • ½ cup light brown sugar
  • 1 teaspoon baking soda
  • A pinch of salt
  • ½ teaspoon cinnamon
  • 1 cup coconut milk
  • ½ teaspoon vanilla extract
  • cup olive oil
  • 1 tablespoon white vinegar

Instructions

  • Grease the cake tin used for this recipe. In a large bowl blend the vegan butter with the brown sugar and spread the mixture evenly in the cake tin.
  • Cut the apple into slices and arrange the slices in the cake tin covering all the mixture.
  • Preheat the oven to 180C / 350F
  • In a large bowl mix all the dry ingredients: gluten-free flour, light brown sugar, baking soda, salt and cinnamon.
  • In a separate bowl, mix the rest of the ingredients: coconut milk, vanilla extract, olive oil and white vinegar.
  • Combine all the ingredients and mix well using a spatula. Pour the batter into the cake tin evenly and bake for about 25 minutes.
  • Cover the cake with tin foil and bake for further 20-25 minutes.
