Grease the cake tin used for this recipe. In a large bowl blend the vegan butter with the brown sugar and spread the mixture evenly in the cake tin.
Cut the apple into slices and arrange the slices in the cake tin covering all the mixture.
Preheat the oven to 180C / 350F
In a large bowl mix all the dry ingredients: gluten-free flour, light brown sugar, baking soda, salt and cinnamon.
In a separate bowl, mix the rest of the ingredients: coconut milk, vanilla extract, olive oil and white vinegar.
Combine all the ingredients and mix well using a spatula. Pour the batter into the cake tin evenly and bake for about 25 minutes.
Cover the cake with tin foil and bake for further 20-25 minutes.
