Our Apple Upside Down Cake is vegan and gluten-free so the whole family can enjoy it!

Fall is here and we are ready to make the most of it. We are enjoying this time of the year in Ireland, our second home. The weather is definitely more fall-like than the weather we had in Spain so it's the perfect time to be making yummy and comforting fall recipes.
At home, we don't usually cook or bake desserts often, but we love making them for birthdays and other special days. Making your own cake is a great way of understanding how much sugar and fat is used, as well as ensuring the quality of the ingredients. We have a few dessert recipes that are always a hit and this is one of them.
About our Recipe
- We use simple ingredients. Our Apple Upside Down Cake is really easy to make using simple ingredients. You will most probably have all the ingredients you'll need at home. We prepare the glaze with vegan butter, brown sugar and sliced apples. For the cake, we use gluten-free flour that can be substituted with all-purpose flour, light brown sugar, baking soda, cinnamon, coconut milk, vanilla extract, olive oil and white vinegar.
- It's easy to prepare. You won't need a food processor or a Kitchenaid for this recipe. All you need are mixing bowls, a fork, a spatula and baking tin. Normally upside-down cakes are made with round baking tins but we use a rectangular one to have smaller slices when serving it.
- It can be made with any fruit of your choice. For this time of the year, we love using apples but we have made our upside-down cake with blackberries too and it turned out amazing. You just need to change the first part of this recipe (topping) and maybe adjust the amount of sugar depending on how sweet the fruit you are using already is. This is what we love about this recipe, it can be adapted easily to suit your taste.
- It's vegan and gluten-free. Our recipe is vegan and gluten-free so everyone in our family can have it. To make this recipe we use self-rising gluten-free flour. The gluten-free flour can be substituted by all-purpose flour if you want to use regular flour.

Apple Upside-Down Cake Step by Step
- Prepare the glaze. In a large bowl blend the vegan butter with the brown sugar and spread the mixture evenly in the greased cake tin.
- Cut an apple into slices and arrange them in the cake tin covering all the mixture. You can make two layers or use another fruit of your choice.
- In a large bowl mix all the dry ingredients: flour, sugar, baking soda and cinnamon.
- In a separate bowl, mix the rest of the ingredients: coconut milk, vanilla extract, olive oil and white vinegar.
- Combine the contents of both bowls and mix well using a spatula. Pour the batter into the cake tin evenly and bake for about 45 minutes at 180C.
Serving options for our Apple Upside-Down Cake
We like serving our upside-down cake warm from the oven with some dairy-free vanilla custard. The best brand we've found so far is the Alpro Custard. This cake goes really good with vanilla ice cream or homemade apple sauce as well.
Any leftovers can be kept in the fridge for 3-4 days and reheated using the oven or microwave.

- ¼ cup vegan butter
- ½ cup brown sugar
- 1 cooking apple
Cake
- 220 g self raising gluten-free flour
- ½ cup light brown sugar
- 1 teaspoon baking soda
- A pinch of salt
- ½ teaspoon cinnamon
- 1 cup coconut milk
- ½ teaspoon vanilla extract
- ⅓ cup olive oil
- 1 tablespoon white vinegar
Instructions
- Grease the cake tin used for this recipe. In a large bowl blend the vegan butter with the brown sugar and spread the mixture evenly in the cake tin.
- Cut the apple into slices and arrange the slices in the cake tin covering all the mixture.
- Preheat the oven to 180C / 350F
- In a large bowl mix all the dry ingredients: gluten-free flour, light brown sugar, baking soda, salt and cinnamon.
- In a separate bowl, mix the rest of the ingredients: coconut milk, vanilla extract, olive oil and white vinegar.
- Combine all the ingredients and mix well using a spatula. Pour the batter into the cake tin evenly and bake for about 25 minutes.
- Cover the cake with tin foil and bake for further 20-25 minutes.
