    What is Gochujang Mayo?

    Gochujang mayo is a dipping sauce that combines the savory umami flavor of Korean gochujang paste with the creamy richness of mayonnaise.

    Gochujang is a popular Korean condiment made from chili peppers, glutinous rice, fermented soybeans, and salt. The name "gochujang" comes from "gochu," the Korean word for chili peppers, combined with "jang" meaning fermented paste. This spicy, umami paste has been used for centuries in Korean cooking but has recently exploded in popularity worldwide.

    When you combine Gochujang chilli paste with mayonnaise, it creates a creamy, mildly spicy, and umami-packed dipping sauce, perfect for your appetizers, sandwiches, stir-fries, or sides.

    How to make our Gochujang Mayonnaise Recipe

    Ingredients

    Just three simple ingredients are used to make a delicious Korean spicy mayonnaise:

    Gochujang chili paste. For our Gochujang Mayo recipe, we use store-bought Korean chili paste. This is easy to find in Asian grocery stores, Asian supermarkets, or large supermarkets. Otherwise, you can buy it online. This ingredient gives a spicy kick to the dipping sauce.

    Mayonnaise. To keep this recipe vegan, we use Vegan Mayonnaise. You can get store-bought vegan mayo in most supermarkets. Our go-to brand for vegan mayonnaise is Hellmann's Mayo. You can as well, use regular mayonnaise, or use homemade mayonnaise.

    Toasted sesame oil. Adding just a little sesame oil makes the texture of the dipping sauce way nicer. It adds creaminess and a delicious taste to the spicy sauce.

    Method

    1. Combine all the ingredients in a small bowl.
    2. Mix well using a spoon or small whisk until you have a uniform sauce. Adjust to your taste with more mayo, gochujang paste, or sesame oil.

    Variations to our Vegan Gochujang Mayo

    This spicy Korean mayo is an incredibly versatile condiment that can be customized in many ways.

    • To make the dipping sauce spicier, you can add more gochujang paste, or combine the gochujang mayo with sriracha, harissa, chili powder, or other hot sauces.
    • Add some acidity by mixing in some lemon juice, fresh lime juice, rice wine vinegar, or apple cider vinegar.
    • If you love garlic, consider adding roasted garlic or garlic powder to the sauce. Blend the sauce using an immersion blender. This can be called Gochujang Aioli.
    • For sweetness, blend in a drizzle of maple syrup, or agave.
    • Include your favorite toppings to add different textures. Some great options are green onions, chives, fried onions, chili flakes, sesame seeds, etc.

    Serving Suggestions

    Gochujang Mayo can be used as a dipping sauce, as a spread, or as a topping for your favorite dishes.

    As a dipping sauce

    This is the perfect dipping sauce. Use this delicious Gochujang mayo for your favourite finger foods such as hashbrowns, French fries, vegan wings, vegan nuggets, gyozas, sweet potato fries, sausage rolls, and more.

    As a spread

    When it comes to using Gochujang mayo as a spread, we have a favorite pairing. Banh mi and Gochujang mayo simply pair beautifully. You can add this spicy sauce to your burgers, wraps, burritos, or even tacos.

    As a topping, sauce or salad dressing

    Add Gochujang mayo to your salads, or top your rice bowls or noodle stir-fries to enhance your meals. This mayo goes really well with potato salads, coleslaw, or noodle salads.

    You can use this spicy Gochujang mayo to toss your fried or roasted veggies, or protein such as tofu or tempeh. We've tried making Bang Bang Cauliflower using Gochujang mayo, and it was delicious!

    The possibilities are endless for customizing this flavorful mayo to suit your tastes!

    Store

    Properly stored, homemade gochujang mayonnaise will keep for 3-4 days in the refrigerator. Be sure to store it in an airtight container. Do not leave it out at room temperature for more than 2 hours.

    FAQ and Tips

    What kind of gochujang should I use?

    You can use any kind of gochujang you like. The spiciness can vary between brands, so taste a little spoonful before using it in the recipe to adjust the heat level. Milder varieties work well if you want just a hint of chili flavor without too much burn.

    Can I substitute another hot sauce for the gochujang?

    Yes, you can use sriracha, sambal oelek, or another chili garlic sauce instead of gochujang. Just start with a small amount and adjust to taste. The flavor profile will be a bit different than gochujang, but still delicious.
