If you are looking for an extra special fall breakfast, look no more. Our Easy Pumpkin Waffles made with fresh pumpkin puree and spiced with lovely fall spices will become a family favorite on those cozy weekend mornings.

Is it too early for fall recipes? I hope no! This year I've been looking forward to the weather getting cold from the beginning of summer. I'm sorry, but being pregnant during summer in a hot climate country is not easy.
My favourite season is finally arriving and I couldn't be more excited. It's time for those cozy fall recipes to start popping on our blog, so get your seasonal ingredients ready!
Last year we spent most of the autumn in Ireland with family. It was lovely, proper autumn with rain and cold weather. We got loads of time to get cooking and enjoying comfort meals like our Roasted Pumpkin Soup or this delicious Vegan Apple Crisp.
And we are starting this season with a recipe that has been in my head for weeks, Easy Pumpkin Waffles, slightly spiced and deliciously hearty.

Using fresh Pumpkin Puree
Where we live, premade or tinned pumpkin puree is not easy to find in supermarkets, so we think it's better to make it at home: fresher, tastier, and healthier.
All you need to do is bake a previously chopped pumpkin at 180Cº / 350F covering the pumpkin with tinfoil to avoid burning the outer parts.
The pumpkin needs to be soft enough to blend into a puree. It should take about 35-40 min. Once the pumpkin is ready, transfer to a blender and blend until you have a smooth puree
If you have some leftover puree after making this recipe, you can keep it for other recipes such as a delicious pumpkin pie or soup. It's perfect to feed babies or toddlers as well adding a little bit of olive oil.

How to make Pumpkin Waffles from scratch
Ingredients
Pumpkin Puree. When we make recipes that use pumpkin puree we always choose to use fresh homemade puree. You can get a tinned puree, we recommend using an organic product.
Pumpkin Spice. Again, we make our own pumpkin spice just because is really easy if you have the four spices needed: cinnamon, cloves, ginger, and nutmeg. Use a tablespoon of cinnamon for each teaspoon of the rest of the spices, easy! I always make enough to save for other recipes. If you prefer to get an already made blend, we recommend you getting simply organic blend.
Flour. To make our Pumpkin Waffles we use all-purpose white flour.
Eggs. We use eggs in our waffle batter. Separating the yolk from the white. I whisk the white of the eggs separately until the mixture thickens into a fluffy cloud consistency. Don't try to do this by hand, use an electric hand whisk. For a vegan alternative, you can use egg replacer, flax seed mixed with water to get an eggy consistency, or simply add more baking powder.
Baking Powder. Needed to make your waffles fluffy.
Plant-based milk. We use soy milk for this recipe but feel free to use almond, cashew, coconut or any other vegetable milk.
Maple syrup. This ingredient is optional as it depends on your taste for sweeter waffles. The pumpkin puree should be sweet enough and if you are serving the waffles with sweet toppings such as maple, fresh fruit, cream or sweetened yoghurt, it may not be needed. We normally skip this ingredient so the waffles are sugar-free, better for our toddler and us!
Vegetable oil. We like adding a little bit of olive oil into the mixture just to get a perfect consistency.
Step by Step Method
While you prepare your waffle batter, turn on your waffle maker as it takes 10-15 minutes to reach optimal temperature.
- Mix all the dry ingredients in a big mixing bowl: Flour, baking powder and spices. Whisk until they are all incorporated
- Add into the mixing bowl the wet ingredients, apart from the egg whites: Milk, egg yolks, pumpkin puree, maple syrup and oil. Whisk until all the ingredients are perfectly incorporated.
- Whisk using an electric hand whisker the egg whites until you have a cloudy consistency. You should be able to form soft peaks. Once it's done, pour the mixture into the batter and gently mix with the rest of the ingredients without overmixing it.
- Add enough batter in the waffle maker and leave it covered while cooking. Do not open the lid if the waffle maker is steaming. When the steam starts reducing it's an indicator that your waffle should be done. Depending on the setting you have it will take more or less time. We normally have it set at 70% between light and dark. It takes around 5-7 minutes for each waffle to be completely cooked.
- Take the waffle out of your waffle maker, leave it to cool for 2-3 minutes, add your toppings and enjoy!

Serving Suggestions
Welcome to my favourite part of the waffle making. Yes, the toppings! I love trying different toppings every time we have waffles or pancakes as it keeps them different and exciting. Whether you are serving these fall waffles for breakfast or a snack, you want to make sure you are using the right toppings:
- Maple syrup, always. We love our organic maple syrup and this is a staple when finishing up our waffles, specially this pumpkin waffles.
- Add more pumpkin spices. Top these comfort waffles with a little bit extra spice blend. It's just too good!
- Fresh fruit. How good does fresh fruit tastes? Use anything you have at home. Strawberries, blueberries, banana, kiwi, raspberries, peach, mango, and I could keep going forever. We use as well our homemade apple sauce to top your pumpkin waffles. It's sugar-free so toddler-friendly!
- Dairy-free yoghurt, fruit or chocolate sauces. For example, coconut yoghurt. We love it because it's creamy and sweet and just perfect to combine with the fruit and maple syrup. For the little ones, you can try our amazing Vegan Chocolate Mousse to top your waffles.
- Seeds or nuts. Our favourite nuts for these fall waffles would be pecan nuts but you can top them as well with walnuts, pistachios, almonds, cashews, chia seeds, linseeds, etc. They all work perfectly. Make sure you shred the nuts for your little ones, as they are a choking hazard.
- And to drink? The best option to go with your morning waffles it's a big cup of coffee or a deliciously fresh smoothie.

SUITABLE FOR TODDLERS AND KIDS
Our easy pumpkin waffles are suitable for toddlers and kids as it does not contain any added sugar if you keep the maple syrup out of the mixture. Instead, we use cinnamon and fresh pumpkin puree to make them taste sweet while keeping them healthy. We use all-purpose flour, but you can use whole-wheat flour or quinoa flour.
Our 2,5 years-old toddler loves waking up with a big waffle waiting for him. I always make sure to make a big enough batch to have some leftover waffles for the weekdays. Mornings are always easier with waffles! Luca is a bit of a picky eater when it comes to breakfast, and having some already made waffles or pancakes makes our weekdays just way easier.

Our Waffle Maker
Waffle makers or irons are inexpensive and if you enjoy making waffles for your family or for yourself, you should definitely invest in one if you haven't yet. I got mine last year and I've been using it almost every weekend. When we don't have any plans for Saturday or Sunday morning it's waffle or pancake time!
We have a Belgian waffle maker by Cuisinart and it works perfectly. It cooks evenly on both sides and it has lights to help you control the time and temperature of your waffle maker or iron.
You can find cheaper options, it depends on your preference and how many times you think you will be using it.
