Red Velvet Waffles (Dairy-free)

Our Red Velvet Waffles are the perfect breakfast or brunch for special days such as Valentine's Day, Christmas, Mother's day, or any other day that you feel like celebrating. Our recipe is dairy-free and doesn't use artificial colouring. Beetroot is our secret ingredient!

Red Velvet Waffles

We love thinking that every day is a good day to enjoy waffles. I really wish I could have enough time during the week to prepare fresh waffles but they do take a bit of time and love. That's why we normally end up cooking waffles during the weekends or on special days.

Valentine's day is just around the corner and for us, as a family of four including a newborn baby and a toddler, a fancy dinner won't be an option this year. Mornings are way easier to handle at this point so this year we decided that we are going to have the most delicious Red Velvet Waffles to celebrate our love and the new arrival of our baby!

We created this recipe thinking of it as a special treat such as our Strawberry Crumble or Apple Crumble. We normally don't add sugar to our waffle recipes but Valentine's day deserves some sweetness doesn't it? Our dairy-free Red Velvet Waffles are a great choice for Mother's Day or Christmas too.

Even if our recipe contains a small amount of sugar, we tried to keep the waffles nutritious by adding beetroot puree instead of artificial food colouring and pure cacao instead of cocoa, which normally contains added sugar and other ingredients.

Red Velvet Waffles

RED COLOUR WITHOUT ARTIFICIAL INGREDIENTS

Red Velvet is a cake mix that combines cocoa and red food colouring to create beautiful desserts. You can find an infinite amount of Red Velvet desserts such as cakes, muffins, cupcakes, pancakes or waffles.

This is the first Red Velvet recipe that you can find on our blog and we wanted to provide an alternative to using artificial colouring. Using beetroot puree is such a great way to get the perfect colour plus all the health benefits that beetroot adds to your recipe.

Beetroot is often referred to as a superfood. When I got to know all the benefits that beetroot has for our body, I started thinking of it as a superfood too. These vegetables are packed with antioxidants, vitamins, minerals and fibre. Beetroot is low in fat too.

To make beetroot puree all you need to do is boil fresh beetroot cut into small pieces until tender, transfer to a blender and blend until you have a smooth puree. You can as well buy pre-cooked beetroot and simply blend it into a puree.

HOW TO MAKE RED VELVET WAFFLES WITH BEETROOT FROM SCRATCH

INGREDIENTS

Beetroot Puree. all you need to do is boil fresh beetroot cut into small pieces until tender, transfer to a blender and blend until you have a smooth puree. You can as well buy pre-cooked beetroot and simply blend it into a puree. You can as well, use Beetroot Powder instead.

Cacao Powder. We choose to use cacao powder as it's raw and without any added ingredients, the perfect superfood to add to your desserts.

Flour. To make our Red Velvet Waffles we use all-purpose white flour.

Eggs. We use eggs in our waffle batter. Separating the yolk from the white. We whisk the white of the eggs separately until the mixture thickens into a fluffy cloud consistency. Don't try to do this by hand, use an electric hand whisk. For a vegan alternative, you can use egg replacer or flax seed mixed with water to get an eggy consistency.

Baking Powder. Needed to make your waffles fluffy.

Plant-based milk. We use soy milk for this recipe but feel free to use almond, cashew, coconut or any other vegetable milk.

Panela Sugar. This ingredient is optional as it depends on your taste for sweeter waffles. The beetroot puree adds a bit of sweetness and if you are serving the waffles with sweet toppings such as maple, fresh fruit, cream or sweetened yoghurt, it may not be needed. You can as well use maple syrup or agave.

Vegetable oil. We like adding a little bit of olive oil into the mixture just to get a perfect consistency. You can as well use plant-based butter or margarine.

Vanilla Bean. We love using vanilla beans instead of vanilla extract but we know it's more expensive.

STEP BY STEP METHOD

While you prepare your waffle batter, turn on your waffle maker as it takes 10-15 minutes to reach optimal temperature.

  1. Mix all the dry ingredients in a big mixing bowl: Flour, baking powder, cacao, sugar, and vanilla seeds if using vanilla bean. Whisk until they are all incorporated
  2. Add into the mixing bowl the wet ingredients, apart from the egg whites: Milk, egg yolks, beetroot puree, and oil. Whisk until all the ingredients are perfectly incorporated.
  3. Whisk using an electric hand whisker the egg whites until you have a cloudy consistency. You should be able to form soft peaks. Once it's done, pour the mixture into the batter and gently mix with the rest of the ingredients without overmixing it.
  4. Add enough batter in the waffle maker and leave it covered while cooking. Do not open the lid if the waffle maker is steaming. When the steam starts reducing it's an indicator that your waffle should be done. Depending on the setting you have it will take more or less time. We normally have it set at 70% between light and dark. It takes around 5-7 minutes for each waffle to be completely cooked.
  5. Take the waffle out of your waffle maker, leave it to cool for 2-3 minutes, add your toppings and enjoy!

SERVING SUGGESTIONS

Welcome to my favourite part of the waffle making. Yes, the toppings! I love trying different toppings every time we have waffles or pancakes as it keeps them different and exciting. If you are making these waffles for a special occasion such as Valentine's Day, make sure to add some red ingredients such as fresh strawberries or raspberries and why not some chocolate syrup and ice cream to make the sweetest breakfast!

Here you can find some other great options to add to your Dairy-free Red Velvet Waffles

  • Maple syrup, always. We love our organic maple syrup and this is a staple when finishing up our waffles.
  • Fresh fruit. How good does fresh fruit taste? Use anything you have at home. Strawberries, blueberries, banana, kiwi, raspberries, peach, mango, and I could keep going forever. We use as well our homemade apple sauce to top your pumpkin waffles. It's sugar-free and toddler-friendly!
  • Dairy-free yoghurt, fruit or chocolate sauces. For example, coconut yoghurt. We love it because it's creamy and sweet and just perfect to combine with the fruit and maple syrup. For the little ones, you can try our amazing Vegan Chocolate Mousse to top your waffles.
  • Seeds or nuts. Our favourite nuts for these fall waffles would be pecan nuts but you can top them as well with walnuts, pistachios, almonds, cashews, chia seeds, linseeds, etc. They all work perfectly. Make sure you shred the nuts for your little ones, as they are a choking hazard.

OUR DAIRY-FREE RED VELVET WAFFLES ARE SUITABLE FOR TODDLERS AND KIDS

Our Red Velvet Waffles are suitable for toddlers and kids. You can reduce or skip the sugar and add instead apple puree or cinnamon to make them sugar-free. As well, our waffles do not contain any artificial colouring and beetroot is such a great veggie for your little ones. We use all-purpose flour, but you can use whole-wheat flour or quinoa flour.

Our almost 3 years-old toddler loves waking up with a big waffle waiting for him. I always make sure to make a big enough batch to have some leftover waffles for the weekdays. Mornings are always easier with waffles! Luca is a bit of a picky eater when it comes to breakfast, and having some already-made waffles or pancakes makes our weekdays just way easier.

OUR WAFFLE MAKER

Waffle makers or irons are inexpensive and if you enjoy making waffles for your family or for yourself, you should definitely invest in one if you haven't yet. I got mine last year and I've been using it almost every weekend. When we don't have any plans for Saturday or Sunday morning it's waffle or pancake time!

We have a Belgian waffle maker by Cuisinart and it works perfectly. It cooks evenly on both sides and it has lights to help you control the time and temperature of your waffle maker or iron.

You can find cheaper options, it depends on your preference and how many times you think you will be using it.

For Valentine's day, we love adding strawberries, vanilla ice cream and chocolate syrup on top of our Waffles.
