    When I discovered Ramen, I was already vegan for a long time, so no, I haven't tried the meat-based broth ramen, but I don't think it's something you need to do to enjoy the culture of ramen. You can make a beautiful umami-rich broth using plant-based ingredients such as miso, shiitake mushrooms, soy sauce, spices, vegetables, etc.

    This Japanese noodle dish can be flavored in many different ways, and with this list of the best Vegan Ramen, you'll discover that making your own plant-based ramen at home can be very simple, using ingredients that you may already have at home.

    Even if some Ramen restaurants just offer one or two vegan options, let me tell you that there are many different recipes to not get bored when it comes to vegan ramen!

    Key Ingredients in Vegan Ramen

    • Broth Base (Dashi): To make a flavorful broth, you'll need umami-rich ingredients such as miso paste, soy sauce, kombu (seaweed), shiitake mushrooms, Nori (seaweed), sun-dried tomatoes, ginger, garlic, or mirin. Depending on the recipe you choose, you may need more or less ingredients.
    • Noodles: Traditional ramen noodles are typically vegan, made from wheat flour, water, and salt. You can also choose another type of noodles, such as rice noodles or soba noodles.
    • Protein: When it comes to choosing your protein for the ramen, you have many options, from edamame beans to tofu, silken tofu, mushrooms, tempeh, tahini, or soy curls.
    • Toppings: Finish your ramen with some fresh vegetables such as pak choi, scallions, asparagus, or peas. Add some sesame seeds, corn, and bamboo shoots, and don't forget to add some sesame chili oil if you enjoy spicy ramen.
